Pineapple pico de gallo shrimp quesadillas

One of the things I miss most about Texas is the pico de gallo that the H.E.B. grocery store sold. So when I saw fresh jalapeno peppers available at the commissary (a rarity in itself) I thought I'd reverse engineer a recipe.

This is one jalapeno, one Roma tomato, a quarter of a pineapple, a half of a purple onion, some cilantro, and a squirt of lime juice.
Of course, what to do with the pico de gallo is another issue entirely. In this case, I made shrimp coconut quesadillas.
It wa a success.
